Wolffish on basil cream

Ingredients for 4 servings:

  • 4 fish fillets (wolffish fillets)
  • 1 bunch of basil
  • 2 tbsp oil, fine
  • 20 g butter
  • 100 ml broth
  • 200 ml whipped cream
  • 1 tbsp crème fraîche
  • Salt
  • Pfeffer, ad M.

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut each fish fillet into 3 pieces. Puree the basil in the oil. Melt the butter and bring to a boil with the broth. Poach the fish pieces in it for 3 minutes on each side. Then remove from the pan, season with salt and pepper, arrange on plates, and keep warm. Reduce the broth considerably with the cream. Stir in the basil paste and crème fraîche, season with salt and pepper. Pour the cream over the prepared fish and serve.
