Ingredients for 2 servings:

  • 500 ml chicken stock
  • 3 potatoes, peeled and diced
  • 2 spring onions, cut into rings
  • ½ stalk(s) celery, finely chopped
  • 1 carrot(s), finely chopped
  • 2 tsp vinegar
  • 1 tsp salt
  • 350 ml milk
  • 2 tbsp flour
  • ½ cup cheese, grated
  • 2 slice(s) bacon (breakfast bacon), diced and rendered

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Combine the first seven ingredients in a saucepan and bring to a boil. Cover and simmer over low heat for about 20 minutes. Then combine the milk and flour. Add this mixture to the soup along with the cheese and bacon. Cook uncovered for about 5-8 minutes, stirring constantly. Tastes delicious with fresh white bread.
