Ingredients for 1 servings:
- 400 g flour
- 6 tbsp extra virgin olive oil
- 1 pinch(s) of sugar
- ½ tsp salt
- 2 tsp pizza seasoning, homemade
- 1 packet of dry yeast
- 150 ml water, possibly more depending on the type of flour
- 300 g sour cream
- e.g. milk
- e.g. salt and pepper
- 3 tsp mustard, medium hot
- 250 g leek, frozen
- 750 g boiled potatoes
- e.g. salt and pepper
- e.g. nutmeg, freshly grated
- 1 m.-sized onion(s)
- 3 garlic cloves
- 300 g bratwurst (poultry)
- 2 tbsp thyme
- some oil
- some fat
- 3 tsp paprika powder, sweet
- 1 tsp oregano, dried
- 1 tsp thyme, dried
- 2 tsp basil, dried
- ½ tsp turmeric
- ½ tsp lovage
Instructions

Mix all the ingredients for the dough. The dough should form a smooth lump. Place it in a sealable bowl and let it rise in a warm place for 1 hour. After rising, the dough should be flecked with fine bubbles and be easy to roll out. While the dough is rising, prepare all the ingredients for the topping. Pre-cook the potatoes in salted water. Cook the leek, which should already be pre-cut into rings, in a pan with a little oil until al dente, then place it in a bowl and set aside. Peel the onion, quarter it, and slice it into rings. Finely dice the garlic. In the same pan with a little oil, cook the onions until translucent, then add the garlic and cook until it begins to smell. Add this mixture to the leek. Peel the boiled potatoes and slice them using an egg slicer. Fry them in the pan with a little oil until slightly crispy, then add them to the leek. Mix everything together. Now mix all the ingredients for the sauce and season to taste. We make the pizza seasoning ourselves: add the individual spices spoonful by spoonful into a clean screw-top jar and mix. You can do this either with a spoon or screw on the lid and shake vigorously. The seasoning is enough for about 8 pizzas, depending on how much and what you’re using it for. The sauce should be thick enough to spread easily on the base. Roll out the dough on a greased or oiled baking sheet and spread the sauce on it. Spread the vegetable mixture over the sauce. Now slice the sausage and arrange it on the vegetables. Sprinkle with thyme and bake at 200°C (top/bottom heat) or 180°C (fan oven) for 25-30 minutes, ideally adjusting the temperature according to your oven. Rotate the pizza once if necessary, so that the lighter corner goes where the darker one was, as ovens often tend to brown one side particularly well. Tip: You can also bake it on 3 round pizza trays, which means you have portioned it out straight away. If you want, you can also top the pizza as shown in the picture. To do this, simply put the leek, fried potatoes, and onions in a separate bowl until ready to use, then halve the sausages and put them in a bowl too. Mix the sauce and spread it on the dough, then place a row of sausage halves. Next, place a row of leeks about 3 cm wide, followed by a row of fried potatoes. Then another row of sausages, then leeks, and finally fried potatoes. Continue this process until all the toppings have been used up and the dough has been topped. Sprinkle the onions and garlic over the top and finish as described above.
