Ingredients for 1 servings:
- 3 tbsp oil
- 1 tbsp paprika powder, sweet
- 1 tsp curry powder
- Salt
- 2 chicken legs
- 200 g sweet potatoes
- 100 g lamb’s lettuce
- salt and pepper
- 1 pinch(s) of sugar
- 3 tbsp vinegar
- 3 tbsp oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
With lamb’s lettuce
1. Preheat oven to 220°C (200°C fan-assisted). Mix oil, paprika, curry powder, and salt in a bowl. 2. Coat chicken thighs in the spiced oil. Place on a baking sheet lined with parchment paper. Cook in the hot oven on the middle rack for 45 minutes. 3. Peel and quarter sweet potatoes. After 15 minutes, add to the chicken thighs. 4. Wash lamb’s lettuce. Mix with salt, sugar, pepper, vinegar, and oil. Serve with the chicken thighs and potatoes. Per serving: 52g protein, 53g fat, 24g carbohydrates = 810 kcal (3391 kJ)
