Tortellini casserole

Ingredients for 2 servings:

  • 300g tortellini
  • Salt
  • 2 onions
  • 2 tbsp oil (olive oil)
  • 2 bell peppers, red
  • 2 bell peppers, green
  • Salt
  • pepper
  • 250 ml milk
  • 250 ml cream
  • 4 eggs
  • 150 g cheese (Emmental), grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the tortellini in plenty of salted water according to the package instructions until al dente. Meanwhile, peel and finely chop the onion, and sauté in hot oil until translucent. Trim, wash, and dice the bell peppers, add them to the onions, and sauté briefly. Season with salt and pepper. Drain the tortellini, let them drain well, and add them to the pan. Season again. Whisk the milk with the cream and eggs, stir in the Emmental cheese, and season with salt and pepper. Pour the tortellini and vegetable mixture into a greased baking dish and spread the topping over the tortellini. Bake in a preheated oven at 190°C for 15-20 minutes.
