Ingredients for 4 servings:
- 1 kg potatoes
- 8 m.-sized eggs
- 1 m.-sized onion(s)
- 250 g cooked ham
- 100 g ham sausage
- 8 tbsp flour
- 2 tsp salt
- 2 tsp white pepper, ground
- 50 g clarified butter
- 100 ml milk
- 100 ml mineral water
- 1 bunch of parsley
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 40 minutes
from raw potatoes
Peel the potatoes, cut into thin slices, and place them in a bowl of cold water. Dice the onion, ham sausage, and cooked ham. Pat the potato slices dry with kitchen towels, place them in a pan with clarified butter, and fry until golden brown. Once the potatoes have browned, add the diced onion and fry with the lid on until tender. Season with salt and pepper. Wash the parsley, shake dry, and chop finely. Beat the eggs with the milk until frothy. Gradually add the flour and mineral water. Let the dough rise for 30 minutes. Mix in the cooked ham, ham sausage, and chopped parsley. Season with the remaining salt and pepper. Place 1/4 of the fried potatoes in a pan with clarified butter. Cover with 1/4 of the batter and fry until golden brown on both sides. Repeat until all the batter is used up. Plate up and serve.
