Chicory in thyme butter

Ingredients for 4 servings:

  • 4 chicory
  • 3 sprigs of thyme
  • 2 oranges
  • 1 tbsp butter
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the chicory and remove the outer leaves. Quarter the stalks lengthwise. Wash the thyme, shake dry, and pick off the leaves. Peel the oranges like apples, removing the white pith. Reserving the juice. Remove the fruit segments from the skins. Heat butter in a pan and sprinkle with the thyme leaves. Brown the chicory on all sides, deglaze with the orange juice, and add the orange segments. Season with salt and pepper. Cover and simmer the chicory over medium heat for 12-15 minutes.
