Ingredients for 4 servings:

  • 3 bell peppers, red, yellow and green
  • 2 tbsp oil
  • salt and pepper
  • 200 ml water
  • 50 g double cream cheese
  • 2 tbsp tomato paste
  • 1 tbsp sugar
  • 1 tbsp flour
  • 50 ml water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and wash the peppers, and cut them into strips (I halved the strips again). Heat oil in a pan and fry the pepper strips. Season with salt and pepper. Mix the water, tomato paste, and double cream cheese and season with salt and sugar. Add the sauce to the roasted peppers and bring to a boil. Stir the flour and water until smooth and thicken the sauce, then simmer for about 1 minute. Serve as a vegetable side dish with a meal.
