Ketchup made from tomato paste

Ingredients for 4 servings:

  • 300 ml water
  • 400 g tomato paste
  • 100 g cane sugar
  • 10 g salt
  • ½ tsp cayenne pepper
  • 30 g honey
  • 30 g onion granules
  • 50 ml apple cider vinegar
  • 7 allspice berries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

with honey

Grind the allspice berries in a mortar and pestle to a powder. Then, in a saucepan, combine the water, tomato paste, and all other ingredients except the honey; mix well. Simmer gently for 10 minutes over low heat. Then, let the ketchup cool to below 40 degrees Celsius (104 degrees Fahrenheit) before adding the honey. Season to taste and bottle. Keeps refrigerated for a limited time. Makes a wonderfully delicious, fruity, spicy ketchup without chemicals. Tip: Instead of cane sugar, you can also use erythritol, which reduces the calorie count. Instead of onion granules, you can also grind two small onions into a puree and add it to the pot.
