Carolina Reaper chili paste

Ingredients for 1 servings:

  • 2 dried chili peppers (Carolina Reaper variety)
  • 600 g chili pepper(s) (variety: cayenne)
  • 200 g Habanero pepper(s), yellow
  • 400 g jalapeño(s), green
  • ½ large vegetable onion(s)
  • 2 cloves garlic
  • 375 ml olive oil
  • 375 ml rapeseed oil
  • some vinegar
  • some salt and pepper
  • some paprika powder, sweet

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours

fruity and spicy

Chop the fresh cayenne peppers, habanero peppers, and jalapeño peppers. Leave the seeds intact. Peel and finely chop the onion. Peel and crush the garlic. Combine everything in a large pot with the Carolina Reaper peppers. Add the oil and vinegar and blend until a smooth paste with small pieces is formed. Bring to a boil, simmer for about 30 minutes, and reduce the heat to low. Then pour into prepared jars and let cool briefly. Seal the jars and cook at 80°C for about 30 minutes.
