Homemade black pudding cake in the traditional way

Ingredients for 1 servings:

  • 500 g homemade black pudding, from the butcher
  • 2 eggs
  • 100 g flour
  • 2 tbsp agave syrup or wildflower honey
  • 100 g diced ham
  • 2 tbsp capers
  • 1 tbsp baking powder
  • 1 shot of brown rum
  • some organic lemon peel

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Remove the black pudding from the casing and mash thoroughly in a bowl. Add the eggs, flour, agave syrup or honey, diced ham, capers, baking powder, rum, and lemon zest, and mix thoroughly by hand until smooth. Heat a pan with a little oil. Pour the black pudding mixture into the pan and form into a flat cake. Fry the cake over medium heat until golden brown on both sides and cooked through. Cut the cake into pieces and serve hot.
