Ingredients for 4 servings:
- 500 g pork belly, fat, without rind and cartilage
- 250 g pork neck
- 250 g beef
- 1 ½ m.-sized eggs
- 19 g salt
- 2 g pepper
- 1 g mace
- ½ g all-spice
- 2 g marjoram
- 1 g caraway
- 1 g lemon peel
- ½ g cardamom
- n. B. Intestine 26/28 or 28/30
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Cut the meat into pieces suitable for grinding. Weigh the spices and mix them in. Coarsely grind (8 mm). Add the eggs. Knead with your hands for a few minutes until the mixture thickens. Fill the casing and press down to the desired length. Grill the sausages.
