Ingredients for 2 servings:

  • 350 g potatoes
  • ½ onion(s)
  • 4 slices of cooked ham
  • 6 eggs
  • 2 slices of cheese
  • 1 pinch(s) of salt and pepper
  • Paprika powder
  • Fat for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Wash the potatoes and cook in a pot for about 30 minutes. While the potatoes are cooking, chop the onions and ham. Whisk the eggs in a bowl and season with salt, pepper and a little paprika. When the potatoes are cooked, drain and peel the potatoes. Then cut into slices. Grease and heat a pan, add the potatoes and fry. When the potatoes are golden brown, add the onions and ham and continue frying. Push the potatoes, onions and ham onto one half of the pan and add the beaten eggs, spreading them evenly in the pan. Place the cheese on the potatoes. Wait until the egg is completely set and then fold it onto the side with the potatoes. If desired, sprinkle a little more oregano on top when serving.
