Ingredients for 2 servings:
- 125 Sausage, spicy e.g. Cabanossi
- 250 g artichoke hearts from the jar
- 1 small onion(s), finely chopped
- 1 small red bell pepper(s), diced
- 4 eggs
- 50 ml milk
- 2 tbsp mineral water
- Salt and pepper from the mill
- Paprika powder
- some oil for frying
- e.g. parsley for garnishing
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Slice the sausage. Place the artichoke hearts in a colander and drain. Halve them if desired. Combine the eggs with the milk and 2 tablespoons of mineral water and season with salt, pepper, and paprika. Heat the oil in a pan, fry the onions, sausage, artichokes, and peppers briefly, stirring occasionally. Then pour the egg-and-milk mixture into the pan. Let it set over medium heat, scraping the mixture together several times with a spatula. Serve garnished with parsley, if desired.
