Ingredients for 1 servings:

  • 2 potatoes, cooked from the previous day
  • 3 slices of bacon
  • 2 tbsp cream or coffee cream
  • 1 tbsp butter or margarine
  • 2 eggs
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Fry the bacon in a pan. Meanwhile, mash the potatoes with a fork and mix with the cream and butter. Season with salt and pepper. Spread them on the bacon to form a large potato pancake. Whisk the two eggs, spread them on the potatoes, and let them set. Grandma always used to make this on Mondays with the leftover potatoes from Sunday.
