Puffball Omelette

Ingredients for 2 servings:

  • 4 eggs
  • 2 slices of salami, diced
  • 1 small onion(s), thinly sliced
  • 1 tomato(s), diced
  • 1 spring onion(s)
  • 1 slice(s) giant puffball, approx. 1.5 cm thick and approx. 20 cm in diameter
  • 1 pinch(s) salt and pepper
  • 1 sprig of parsley
  • some oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Dice the puffball and fry in a pan with a little oil. In a second pan, fry the remaining ingredients, except the tomato and parsley, until the onions are translucent. Crack the eggs into a bowl. Mix the fried mushroom cubes with the other ingredients in a pan. Add the beaten eggs, salt, and pepper. Fry over medium heat until golden brown on both sides. You can also vary this with cheese or a cooked and diced sweet potato, depending on your taste.
