Gratinated goat cheese with leaf spinach and boiled potatoes

Ingredients for 2 servings:

  • 4 large potatoes
  • ½ pack of goat cheese (soft cheese or cream cheese)
  • 200 g leaf spinach (frozen or fresh)
  • Salt
  • possibly honey

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

a quick, vegetarian dish for a small budget

Peel the potatoes and boil them in lightly salted water until tender. Wash the fresh spinach leaves and cook them in a pot with a little water. Defrost the frozen spinach leaves without water on low heat and heat them up. Cut the goat cheese roll into 6 slices, each about 1 cm thick, and bake them in the oven at 200 degrees Celsius for 5 minutes. If desired, melt a dollop of honey over the still-hot goat cheese and then serve. This dish is really inexpensive and quick to make, and it’s also a great way to use up leftovers.
