Ingredients for 6 servings:
- 500 g pasta, e.g. spiral pasta or penne
- 1 can pineapple chunks, drained
- 300 g Gouda, young or middle-aged, diced
- 1 onion(s), finely diced
- 6 medium-sized gherkins, diced
- 300 g meat sausage, diced
- 3 eggs, diced
- 250 ml salad mayonnaise
- salt and pepper
- 2 tbsp herb vinegar
Instructions
Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 15 minutes; Total time approx. 6 hours 45 minutes
Cook the pasta and rinse. Chop all ingredients as small as you like, place in a bowl, mix with the mayonnaise, season with salt and pepper (it needs a little salt—it will absorb the flavor), and fold in the pasta. I always add a little of the pineapple juice and, if needed, a little more of the cucumber juice. The salad should sit in the refrigerator for at least 6 hours, preferably overnight, and season again before serving.
