Vegetarian "schnitzel" with braised shallots

Ingredients for 2 servings:

  • 400 g waxy potatoes
  • 4 tbsp breadcrumbs
  • 2 eggs
  • 4 shallots
  • 2 tbsp Worcestershire sauce
  • 1 tbsp sugar
  • 40 g butter
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Wash the potatoes and grate them finely. Season the grated potatoes with salt and pepper and mix with an egg and breadcrumbs. It should form a smooth mixture. Heat 20g of butter in a pan, add the mixture, and flatten it until uneven. Season again with salt and pepper. After a few minutes, carefully turn the schnitzel over. You may need two spatulas for this. Then bake the schnitzel on the middle rack of an oven preheated to 160°C (320°F) with a fan for about 15 minutes. While it’s baking, peel and chop the shallots and heat 20g of the butter in another pan. Add the sugar to the butter and let it caramelize. Add the shallots and toss them in the caramel. Season with a little salt and add the Worcestershire sauce. Everything is sautéed together until the shallots are translucent. The schnitzel is delicious with a fried egg on top.
