Ingredients for 4 servings:
- 250 g ribbon pasta, narrow, tri-colored (if possible)
- salt and pepper
- ½ bunch of spring onions
- 250 g mushrooms
- 1 lemon(s), the juice
- 1 bunch of basil
- 2 tbsp oil (sesame oil)
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- 1 pinch(s) of cayenne pepper
Instructions

without meat
Cook the noodles in plenty of salted water until al dente, then drain well. Slice the spring onions and slice the mushrooms. Drizzle the mushrooms with half the lemon juice. Finely chop half the basil. Mix with the mushrooms, spring onions, and noodles. Whisk together the sesame oil, soy sauce, the remaining lemon juice, and the peanut butter until smooth. Season generously with salt, pepper, and cayenne pepper and pour over the noodle and mushroom mixture. Sprinkle with the remaining basil and, if desired, chopped peanuts.
