Ingredients for 4 servings:

  • 4 chicken fillets
  • 4 tbsp cornmeal
  • 1 tbsp spice(s) to taste
  • 1 tbsp oil for frying

I recently saw a great alternative to the usual method of preparing and breading chicken fillets at Jamie Oliver’s. The result is less heavy and more delicious! Pound the chicken fillets between two sheets of baking paper using a rolling pin or meat tenderizer until they are about twice their width. Mix the cornmeal with the spices. You can choose the spices according to your taste—whether “plain” with salt and pepper or chicken seasoning, gyro seasoning, Indian, Spanish, or Italian spice blend—whatever you like best. Sprinkle the mixture thinly on both sides of the fillets and, after re-covering with the baking paper, lightly pound the meat into the meat. Heat the oil in a non-stick pan and fry the fillets over medium heat for 7-8 minutes on each side until golden brown and crispy. Serve with aioli or a yogurt dip, salad, and/or mixed vegetables.
