Organic blood orange syrup

Ingredients for 1 servings:

  • 3 kg blood orange(s), organic
  • 960 g sugar
  • 30 g citric acid

Instructions

Working time approx. 1 hour 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 1 hour 40 minutes

Wash and dry the blood oranges thoroughly. Peel the zest with a zester and place it in a saucepan, taking care not to remove any of the white pith. Halve the blood oranges, squeeze the juice, and add the juice and pulp to the pan. Remove the pips. Add 100g of sugar and let stand for a day. Then strain everything through a cheesecloth. This yields approximately 1.6 liters of juice. Add the citric acid and the remaining sugar. Bring everything to a boil and simmer for three minutes. Immediately pour into hot, rinsed bottles and seal.
