Blackberry syrup

Ingredients for 2 servings:

  • 600 g blackberries
  • 450 g sugar
  • 250 ml water
  • 2 ½ g citric acid

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Place the sugar in a saucepan and pour over boiling water. Simmer at 100°C, taking care that the sugar does not caramelize. Add the blackberries and purée thoroughly with a hand blender or mash with a potato masher. Then add the citric acid and simmer for about 20 minutes, stirring occasionally. Then strain the liquid through a very fine sieve or cheesecloth and bottle the syrup. This recipe yields approximately 900 ml of syrup. Suitable for cocktails, among other things.
