Zucchini schnitzel with cheese

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 2 eggs
  • 3 slices of cheese (e.g. Gouda)
  • 150 g breadcrumbs
  • some herbs of Provence
  • salt and pepper
  • e.g. olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Perfect for vegetarians! Tastes good hot or cold!

Wash and dry the zucchini, and cut into slices (or strips). In a deep dish, combine the eggs with salt, pepper, and herbs. Place the breadcrumbs on a separate plate. Dip the zucchini slices several times in the egg, then coat in the breadcrumbs. Fry in a little olive oil until golden brown. Once one side is cooked, flip the zucchini and spread the cheese on top. Note: Do not allow the cheese to extend over the edges. Serve as a side dish or with cooked vegetables.
