Jerk Chicken Wings

Ingredients for 4 servings:

  • 1 ½ kg chicken wings
  • ½ onion(s)
  • 6 cloves garlic
  • 5 spring onions
  • 3 chili peppers (Habaneros)
  • 2 tbsp thyme, fresh
  • 1 tbsp salt
  • 2 tsp black pepper, freshly ground
  • 2 tsp allspice, ground
  • 1 tsp thyme, dried
  • ½ tsp cinnamon powder
  • ½ tsp nutmeg
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp sugar, brown
  • 3 small limes, the juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Blend all the marinade ingredients in a blender. Marinate the chicken wings overnight in the refrigerator (or for at least 2 hours at room temperature). Then bake in the oven at 225°C for 20 minutes. Remove, brush with the remaining marinade, flip, and return to the oven for another 15 minutes. Repeat this process until the chicken wings are nicely browned and cooked through.
