Pear and coconut muffins

Ingredients for 1 servings:

  • 75 g sugar
  • 1 egg(s)
  • 100 ml milk
  • 100 ml vegetable oil
  • 200 g flour
  • 2 tbsp baking powder
  • 1 tbsp baking soda
  • 120 g desiccated coconut
  • 3 m.-sized pear(s)
  • e.g. jam (pear jam)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C (top/bottom heat). Peel the pears and cut into small pieces. Whisk the sugar and egg for about 4 minutes, then add the milk and oil. Combine the flour with the baking powder and baking soda, and stir briefly on the lowest setting. Fold in the pear pieces and 100g of desiccated coconut. Pour the batter into the muffin cases (we made 15). Bake the muffins in the hot oven for about 25 minutes. While still warm, spread with jam and garnish with the remaining desiccated coconut.
