Ingredients for 1 servings:

  • 2 tomatoes, preferably fruity
  • 2 apples, sour
  • some oil
  • 1 onion(s), finely chopped
  • ½ cube of stock
  • 1 fish fillet(s) (e.g. cod, hake, plaice), fresh or frozen
  • 1 tbsp lemon juice
  • Salt
  • 1 tbsp sour cream
  • e.g. parsley, chives or cress

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Score the tomatoes crosswise and place them in hot water until the skin peels off easily. Then dice the peeled tomatoes. Peel and core the apples and dice them too. Heat a little oil in a pan and add the finely chopped onion until lightly browned. Add the diced tomatoes, apples and stock cubes to the pan and sauté over low heat for about 10 minutes (gourmet tip: a splash of white wine refines the flavor even more). Meanwhile, marinate the fish fillets with lemon juice, season with salt and add them to the pan. Now add 1 tablespoon of sour cream to the fish and sauté for another 10 minutes. Sprinkle with parsley, chives or cress and serve. Boiled potatoes and a variety of salads go well as a side dish.
