Green beans with oranges and pecans

Ingredients for 2 servings:

  • 400 g green beans
  • salt and pepper
  • 1 onion(s), red
  • 24 pecan nuts, halves
  • 2 tbsp butter
  • 2 tsp brown sugar
  • 1 tsp mustard, medium hot
  • 6 tbsp orange juice
  • 1 orange(s), filleted
  • 1 tsp thyme leaves, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash and trim the beans, cut into bite-sized pieces, and cook in boiling salted water for about 12-15 minutes. Drain, rinse in cold water, and let drain. Peel, halve, and thinly slice the onion. Roughly chop the pecans. Heat the butter in a pan, sauté the onion and nuts, add the sugar, and caramelize. Stir in the mustard and orange juice. Fold in the beans, orange segments, and thyme, and heat for about two minutes. Season with salt and pepper.
