Sweet potato toast with strawberries, goat's cheese and mint

Ingredients for 1 servings:

  • 1 large sweet potato(s)
  • 150 g strawberries
  • 150 g goat’s cheese
  • salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • possibly basil, optional
  • some mint leaves, fresh
  • 1 bunch of arugula

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the sweet potato, cut into approximately 1 cm thick slices, brush lightly with olive oil, and season with salt. Bake on a baking sheet in the oven at 200°C (top/bottom heat) until soft. Wash the strawberries, remove the middle parts, and slice them. Slice the goat’s cheese as well. Mix together the salt, pepper, olive oil, balsamic vinegar, and basil, if desired, and drizzle over the goat’s cheese. Let it sit for a while. Finely chop the fresh mint. Arrange the sweet potato toast on a plate, top with the arugula, then the goat’s cheese slices, and garnish with the strawberry slices and mint strands.
