Red Grandma Pasta Salad

Ingredients for 4 servings:

  • 250 g pasta
  • 8 tomatoes, dried in oil
  • 500 g zucchini
  • 2 onions, red
  • 1 cup of cream (200 ml)
  • 2 tbsp white wine vinegar
  • salt and pepper
  • n. B. Basil leaves, cut into strips
  • 30 g pine nuts

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 40 minutes

Italian

Cook pasta according to package instructions until al dente. Chop tomatoes. Slice zucchini into thin sticks and onion into thin rings, and sauté both in hot olive oil for about 8 minutes until translucent. Add cream, bring to a boil, and remove from heat. Then add the drained pasta, tomatoes, salt, pepper, vinegar, and basil strips. Toast the pine nuts in a pan without adding any fat and stir into the salad. Let stand for at least two hours.
