Zucchini chocolate muffins

Ingredients for 1 servings:

  • 2 eggs
  • 125 g brown sugar
  • 1 packet of vanilla sugar
  • 125 g low-fat curd cheese
  • 125 g flour
  • 125 g almonds, ground
  • 1 packet of baking powder
  • 1 tbsp cinnamon powder
  • 1 zucchini
  • 1 tbsp baking cocoa or 4 tbsp chocolate drops

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Grate zucchini (about the size of your hand – typical supermarket size, not the arm-sized monsters you find in your garden) and squeeze some of the excess liquid. Beat eggs and sugar until frothy, then stir in the remaining ingredients except for the chocolate chips or cocoa powder. Using chocolate chips: Mix in the chocolate chips and fill the batter into muffin cups – this will make about 20 muffins. Using cocoa powder: Divide 2/3 of the batter between the muffin cups – this will make about 20 muffins. Mix the cocoa powder with the remaining third of the batter and spread it over the light-colored batter. Stir once in the muffin cups with a spoon handle. Bake at 200°C for 20 minutes.
