Warm tomato and zucchini salad

Ingredients for 2 servings:

  • 2 small zucchini
  • 2 large vine tomatoes
  • 2 tbsp olive oil
  • 2 tsp Italian herbs, e.g. basil, oregano and thyme

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Vegan

Preheat the oven to 200°C. Wash the zucchini and tomatoes, slice them, and place them on a baking sheet lined with parchment paper. Drizzle with oil and sprinkle with the herb mixture. Bake for about 10 minutes. Serve lukewarm.
