Potato salad with honey mustard à la Püp und Püppel

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 small apple
  • 1 small onion(s)
  • 1 tbsp mustard
  • 1 tsp honey
  • Salad herbs
  • salt and pepper
  • 1 cup of sour cream, approx. 200 g

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and slice the potatoes, then boil them in salted water until al dente. Drain the potatoes and place them in a bowl. Peel the onion and apple and dice or blend them. Add both to the potatoes, season, and top with honey and mustard. Stir in the sour cream and serve. Tip: Additional ingredients can include spring onions, chives, radishes, bell peppers, egg, and tomatoes.
