Ingredients for 2 servings:
- 600 g salmon fillet(s), 2 pieces of 300 g each
- 3 carrots
- 1 zucchini
- 2 pointed peppers, red
- 1 package of white mushrooms, approx. 400 g
- 10 cherry tomatoes
- 1 large onion(s)
- 5 garlic cloves
- 1 package of feta cheese, approx. 200 g
- salt and pepper
- chili powder
- Parsley
- olive oil
- ½ lemon(s)

Roughly chop the vegetables. Halve the tomatoes. Quarter the mushrooms. Chop the garlic. Place everything in a large bowl and mix with salt, pepper, chili powder, parsley, and olive oil by hand. Then transfer to a baking dish. Dice the feta cheese and sprinkle over the vegetables. Place the salmon on the bed of vegetables and season with salt, pepper, chili powder, and parsley. Place a lemon wedge on the salmon and drizzle with olive oil. Bake the dish at 150°C (fan oven) for 37 minutes. The vegetables will still be crisp and the salmon will be translucent.
