Potato salad with onion, mustard and ham dressing

Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 2 large onions
  • 2 tbsp rapeseed oil
  • 125 g diced ham
  • 250 ml low-fat milk
  • 3 tbsp mustard, medium hot
  • 2 tbsp, heaped sauce powder (light sauce)
  • salt and pepper

Wash the potatoes, place them in a microwave container while still dripping wet, and cook in the microwave for 30 minutes. Cooking time per 50g of potatoes: 1 minute at 630 watts. Peel the cooled potatoes, cut them into 2 to 3mm thick slices, and place them in a bowl. Peel the onions and chop them very finely. Heat the oil in a saucepan and fry the diced ham while stirring. After about 2 minutes, add the onions and sauté for another 3 minutes. Add the milk, salt, pepper, and mustard and mix well. Stir in the sauce powder, bring the sauce to a boil, let it thicken slightly, pour it over the sliced ​​potatoes, and mix everything well. Let the salad marinate for 2 hours. Season again with salt before serving. Goes perfectly with grilled food or baguette.
