Fried pineapple with mint sugar

Ingredients for 4 servings:

  • ½ pineapple
  • olive oil
  • 20 mint leaves
  • 2 tbsp sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Peel the pineapple, quarter it, and remove the center core. Cut the pineapple halves lengthwise into 8 slices. Heat the olive oil in a non-stick pan and fry the pineapple slices for two to three minutes on each side. Tear the mint leaves into small pieces and place them in a mortar and pestle with the sugar. Grind the ingredients until a green powder forms. Add the mint sugar to the pan and toss the pineapple slices in it. Remove the pan from the heat immediately, as the sugar will burn. Serve with vanilla ice cream.
