Carrot stew from the slow cooker

Ingredients for 6 servings:

  • 100 g bacon or ham
  • 2 onions
  • 20 g clarified butter
  • 750 g carrot(s)
  • 750 g potatoes
  • 750 ml vegetable stock
  • salt and pepper
  • Parsley
  • possibly ginger

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 8 hours; Total time approx. 8 hours 30 minutes

Dice the bacon and onions, fry in clarified butter, and let them brown. You can use a little stock to loosen the juices. Add the bacon and onions to the slow cooker. Dice the potatoes and carrots and add them to the slow cooker. Pour in the stock. Cook everything in the slow cooker on “Low” for 8 hours. Use a slotted spoon to remove any solids from the slow cooker and mash them in another bowl. Add the stock until the desired consistency is reached, or enjoy everything as a stew with chunks. Season with salt, pepper, and ginger, if desired. Chop the parsley and fold in. Like any stew, this one tastes better the second day. The parsley is added at the end, but it’s important for the flavor.
