Strawberries in balsamic vinegar with wild garlic

Ingredients for 1 servings:

  • 500 g strawberries, fully ripe
  • 50 g sugar or honey
  • 50 ml balsamic vinegar
  • 2 tbsp wild garlic, the fruits!
  • 1 tsp lemon zest
  • 2 pinches of black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 7 minutes; Total time approx. 2 hours 22 minutes

a brilliant composition

Wash the strawberries, carefully hull them, and cut them into small pieces. Let them steep with the sugar or honey for 2 hours. Then boil the strawberries with the vinegar for 5 minutes. Add the wild garlic, pepper, and lemon zest, and boil the mixture for another 2 minutes. Pour the hot mixture into small, tightly sealed jars and store the jars in a cool, dark place. The strawberries have a very long shelf life and add a particularly zesty touch to appetizers, salads, and sandwiches.
