Ingredients for 1 servings:
- 2 kg fig(s), very ripe fresh (blue)
- 1.8 kg sugar
- 1 lemon(s), juice
- 150 g mustard powder, yellow
- 50 g mustard powder, black

made from fresh blue figs, with lots of mustard powder
Mustard powder (also called mustard flour) is available in pharmacies and Turkish shops. Peel and remove the stems from the figs, then cut them into pieces (I prefer larger pieces, such as quarters). Mix with the granulated sugar and slowly bring to a boil, stirring constantly. When the mixture starts to bubble, simmer for 5 minutes. Then add the lemon juice. Simmer for another 5 minutes, then stir in the mustard powder. After another five minutes, test for settling. If it’s OK, pour into screw-top jars. Turn the jars upside down and let them cool. This yields approximately 2500 ml, or about 8 jars of 300 g each. Best before: at least 1 year.
