Caramelized apple pancakes

Ingredients for 4 servings:

  • 2 eggs
  • 600 ml milk (1.5%)
  • 40 g flour
  • 2 apples
  • 40 g butter
  • 2 tbsp sugar
  • 1 pinch of salt
  • n. B. Sauce powder (vanilla flavor)

Make a thin pancake batter from the eggs, 100 ml of milk, and the flour with a pinch of salt. Let it rest for at least 2 hours. Prepare a vanilla sauce from half a liter of milk and the sauce powder according to the package instructions and keep warm. Set the oven to 80°C. Peel and core the apples, quarter them, and cut them into thin slices. Heat a small non-stick frying pan. Briefly fry 1/4 of the apple slices with 5 g of butter. Pour 1/4 of the batter over them and cook the pancake. Add another 5 g of butter when turning. Sprinkle the finished pancake in the pan with sugar on both sides and continue cooking until the sugar is lightly caramelized. Keep warm in the oven and cook all four pancakes in this way. Serve with the prepared vanilla sauce. Tips: This dessert can also be made all at once in a large pan and then quartered. This eliminates the need to keep the pan warm. The tart apple flavor can be sweetly rounded off with the addition of raisins and cinnamon. It’s important that the batter rests for at least 2 hours before baking the pancakes.
