Kaiserschmarrn with caramelized apples

Ingredients for 3 servings:

  • 20 g butter
  • 20 g sugar
  • 1 apple, peeled, cut into wedges
  • 30 g almonds, chopped
  • 30 g raisins
  • 150 g flour
  • ¼ liter of milk
  • 3 egg yolks
  • 20 g butter, soft
  • 3 egg whites
  • 20 g sugar
  • n. B. Powdered sugar for sprinkling
  • some salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the first 20g of butter in a (preferably non-stick) pan over medium heat. Add 20g of sugar and dissolve, stirring constantly. Now add the prepared apple slices, increase the heat to high, and caramelize the fruit slices slightly. Now add the almonds and raisins and reduce the heat to the lowest setting for now. Meanwhile, mix the flour with the milk in a bowl until smooth. Stir in the three egg yolks, then mix in the softened butter and a little salt. Beat the three egg whites separately with the remaining sugar until stiff peaks form, then carefully fold this into the batter with a whisk. Now reduce the heat under the pan to medium and pour the finished batter onto the apple slices. After about 4 minutes, the batter will have set and can be pulled apart with two forks. Dust the Schmarrn with powdered sugar if desired and serve immediately.
