Ingredients for 4 servings:
- 200 g flour, also wholemeal or spelt flour
- ½ liter of milk
- 3 eggs
- 2 tbsp sugar
- Salt
- Clarified butter or rapeseed oil
- ½ kg berries (aronia)
- Cane sugar (whole), for sprinkling
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Make a smooth batter from flour, milk, eggs, salt, and sugar. Let it rest for about 10 minutes. Then stir in the stemmed aronia berries (chokeberries – very rich in vitamins). Heat the oil in a non-stick pan and then pour in a ladleful of batter. Reduce the heat slightly. Cook for two minutes on each side. Remove any remaining berries with a wooden spoon before adding the next ladleful. Sprinkle with a little raw cane sugar.
