Pancakes with aronia berries

Ingredients for 4 servings:

  • 200 g flour, also wholemeal or spelt flour
  • ½ liter of milk
  • 3 eggs
  • 2 tbsp sugar
  • Salt
  • Clarified butter or rapeseed oil
  • ½ kg berries (aronia)
  • Cane sugar (whole), for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Make a smooth batter from flour, milk, eggs, salt, and sugar. Let it rest for about 10 minutes. Then stir in the stemmed aronia berries (chokeberries – very rich in vitamins). Heat the oil in a non-stick pan and then pour in a ladleful of batter. Reduce the heat slightly. Cook for two minutes on each side. Remove any remaining berries with a wooden spoon before adding the next ladleful. Sprinkle with a little raw cane sugar.
