Ingredients for 3 servings:

  • 1 red bell pepper(s)

  • 250 g mushrooms, fresh, or 1 small jar
  • 2 beefsteak tomatoes
  • 1 cup sour cream
  • ½ liter vegetable broth
  • olive oil
  • curry powder
  • Tomato paste
  • chili flakes
  • Herbs of Provence
  • lemon juice
  • cornstarch
  • salt and pepper

Cut the meat into strips and fry briefly in hot olive oil, seasoning with salt and pepper. Add the finely chopped onions, carrots, leeks, mushrooms, and a little tomato paste and fry briefly. Pour in the vegetable stock and cream, sprinkle with a pinch of chili flakes, and simmer with the lid on for about 10-15 minutes. Now add the sliced ​​bell peppers and the peeled and sliced ​​tomatoes, season generously with curry and the other spices, and simmer again until the bell peppers are still firm to the bite. Finally, thicken with cornstarch. Serve with rice or fresh bread and a crisp salad.
