Cinnamon crêpes with vanilla sauce

Ingredients for 8 servings:

  • 70 g flour
  • 1 pinch of salt
  • ½ tsp cinnamon powder
  • 2 tbsp sugar
  • 2 eggs
  • 150 ml milk
  • Oil, for frying
  • 250 ml milk
  • 1 vanilla pod(s)
  • 2 egg yolks
  • 1 tbsp cornstarch
  • 2 tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Crêpes: Mix flour, salt, cinnamon powder, sugar, and eggs into a smooth batter. Gradually stir in the milk. Let it stand for 10 minutes. Stir the batter thoroughly again and cook 8 thin crêpes in a 20 cm diameter pan with a little oil. Vanilla sauce: Boil the vanilla bean pulp in 200 ml of milk. Mix the remaining milk, egg yolks, sugar, and cornstarch and stir into the boiling vanilla milk. Bring to a boil again and then remove from the heat. Stir constantly to prevent burning. Vanilla ice cream with cherries goes wonderfully with this!
