Black salsify and apple soup

Ingredients for 4 servings:

  • 250 g salsify
  • 1 small onion(s)
  • 1 tbsp butter
  • 0.8 liters of vegetable broth
  • 1 small apple, sour
  • 100 g cream
  • 100 g sour milk
  • e.g. Tabasco
  • 3 slices of black bread

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Chop the onion and sauté in butter until translucent. In the meantime, peel the salsify. Be sure to wear gloves! The salsify leaves a sticky residue on your skin that’s very difficult to wash off! Cut the salsify into roughly 1 cm wide pieces and add to the onions. Sauté for 1 minute. Add the vegetable stock and simmer for 15 minutes. In the meantime, chop the apple. Add the apple, cream, and sour milk to the soup and puree everything. Season the soup with Tabasco. Cut the brown bread into cubes, toast them in a pan without fat, and serve with the soup.
