Ingredients for 6 servings:
- 1 jar sour cherries or morello cherries
- 20 g cornstarch
- 55 g sugar
- 2 tbsp vanilla sugar
- some lemon juice
- 1 banana(s)
- 250 g quark
- 150 g yogurt
- 200 ml whipped cream
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Drain the cherries well, reserving the juice and measuring out 175 ml. Blend the cornstarch with a little cherry juice until smooth. Bring the remaining juice, a little lemon juice, 25 g sugar, and 1 sachet of vanilla sugar to a boil, then stir in the blended cornstarch. Bring back to a boil, add the cherries, and stir frequently while cooling. Peel the banana and puree it with a little lemon juice. Stir the quark, yogurt, 30 g sugar, and 1 sachet of vanilla sugar into the bananas. Whip the cream until stiff and fold in. Pour the banana quark into 6 tall highball glasses and top with the cherry compote.
