Ingredients for 4 servings:
- 2 tbsp vinegar
- 4 tbsp oil (garlic oil)
- 1 bunch of flat-leaf parsley
- ½ head of iceberg lettuce
- 1 bunch of rocket
- Salt
- pepper
- 400 g chanterelles
- 100g bacon
- 1 large tomato(s)
- 1 tbsp lemon juice
- 1 onion(s)
- 1 dashes Maggi
- 1 tbsp butter
- 2 sprigs of thyme

Steamed chanterelles on leaf salad
Clean the chanterelles with a soft brush, trimming away any moldy or flabby bits. Heat butter in a pan, add the finely chopped onion and bacon. Sauté, then add the chanterelles and the finely chopped tomato. Season with salt and pepper, a dash of Maggi, and lemon juice. While everything is simmering, clean the lettuce, stir in the vinaigrette, add the thyme and 1/2 bunch of parsley. Toss the lettuce. Arrange on plates and scatter the warm chanterelles over the top. Finely chop the remaining parsley and scatter over the top. Serve with toasted brown bread.
