Ingredients for 4 servings:
- 5 m.-sized potatoes
- ½ onion(s)
- 3 tbsp vinegar
- 1 tbsp oil
- 6 tbsp water
- 1 tsp sugar
- 1 pinch of salt
- pepper
- some chives
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 40 minutes
with vinegar and oil marinade
Boil the potatoes for 25 minutes, let them cool, and then peel them (they’re easier to peel while they’re still warm). Cut the potatoes into thin slices or press them through a potato masher. Peel and finely dice the onion and add it to the potatoes. Mix the vinegar, oil, water, salt, and sugar together to make a marinade. Pour over the potatoes and mix thoroughly. Garnish with pepper, chives, eggs, etc., if desired. The potato salad should marinate for about 1-2 hours.
