Wild boar roast without effort

Ingredients for 6 servings:

  • 2 kg wild boar
  • 1 bottle of dry red wine
  • 1 jar Game stock
  • 3 onions
  • 4 cloves garlic
  • 150 ml port wine
  • 1 bay leaf
  • Spice mix (game spice)
  • Tomato paste
  • e.g. porcini mushrooms or mixed mushrooms, dried

Working time approx. 15 minutes; Cooking/baking time approx. 12 hours; Total time approx. 12 hours 15 minutes

Slow cooker, simple but brilliant

Rub the wild boar (I used a shoulder) thoroughly with the spices, sear it vigorously on all sides, and add it to the slow cooker. Then fry the diced onion in the same pan and also fry the tomato paste. Add this and all the remaining ingredients to the slow cooker. I set the slow cooker on low on Saturday evening around 11:30 p.m., and at noon on Sunday we had a deliciously tender wild boar roast. We served it with parsley potatoes and braised savoy cabbage. Tip: If you like, you can of course marinate the game in buttermilk/red wine/herbs beforehand. I had a young animal from a trusted hunter and didn’t think it was necessary. The nice thing about the slow cooker is that nothing burns, and if the food waits an extra 1-2 hours for the people to eat, it doesn’t matter at all.
