Drunken wild boar in honey-beer sauce

Ingredients for 4 servings:

  • 1 kg leg(s) of wild boar
  • 50 g lard
  • Apple juice or lemon juice
  • Salt
  • pepper
  • 125 g honey
  • 250 ml beer (dark beer)
  • 4 cl schnapps (caraway schnapps)
  • ½ tsp caraway seeds
  • 2 juniper berries, crushed

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 days 2 hours

Saxon cuisine

Marinate the meat for two days, turning it several times. Drain. Rub it with salt and pepper and sear it vigorously in lard. Gradually add the marinade, reducing it continuously. Braise for approximately 1-1.5 hours. Finally, season with apple or lemon juice. I recommend cranberry compote and potato dumplings as side dishes.
